Ingredients:

Crust:

  • 1 1/2 cups almond flour
  • 1/4 cup melted butter
  • 3 tbsp TagaSweet™
  • 1/4 tsp vanilla extract

Filling:

  • 24 oz (3 blocks) cream cheese, softened
  • 1 cup TagaSweet™
  • 3 large eggs
  • 1/4 cup sour cream
  • 1 tsp vanilla extract
  • 1/2 tsp lemon zest (optional, for a hint of brightness)


Instructions:

  1. Prepare the Crust:
    1. Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan or line the bottom with parchment paper.
    2. In a medium bowl, mix the almond flour, melted butter, TagaSweet™, and vanilla extract until well combined.
    3. Press the mixture evenly into the bottom of the springform pan to form the crust.
    4. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let it cool.
  2. Make the Filling:
    1. In a large mixing bowl, beat the softened cream cheese and TagaSweet™ until smooth and fluffy.
    2. Add the eggs one at a time, mixing well after each addition.

  3. Bake the Cheesecake:
    1. Pour the filling over the cooled crust, spreading it evenly.
    2. Place the cheesecake in the preheated oven and bake for 50-60 minutes. The center should still have a slight jiggle, but the edges should be set.
    3. Turn off the oven, crack the door slightly, and let the cheesecake cool inside the oven for about 1 hour (this helps prevent cracks).
  4. Chill and Serve:
    1. Remove the cheesecake from the oven, let it cool to room temperature, then refrigerate for at least 4 hours (or overnight for best results).
    2. Before serving, run a knife around the edges of the pan, release the springform, and slice into wedges.
