TagaSweet™ Chocolate Chip Cookies

These cookies maintain a sweet, rich flavor while providing the benefits of lower calories and a lower glycemic index thanks to the TagaSweet™. Enjoy!

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup TagaSweet™
  • 1/4 cup brown TagaSweet™ (or a mix of TagaSweet™ and a bit of molasses for flavor)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (dark or semi-sweet)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and TagaSweet™: In a large bowl, cream together the softened butter, tagasweet™, and brown tagasweet™ until the mixture is light and fluffy.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract, mixing well after each addition.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Mix Together: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
  6. Fold in Chocolate Chips: Gently fold in the chocolate chips.
  7. Scoop Dough: Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may appear slightly underbaked, which is fine as they will continue to set.
  9. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
